All nostalgia aside, I agree that a V6 could easily be modeled into a Supercar/Exotic. Technology is certainly in a different place now than it was 10 short years ago. The only constant in the world is change.
(Nostalgia less aside) However like the GT40, my initial love for the 2005 GT began with it's "Made in America" tag. It will be impossible to get that badass, get out of my way, eat your little car for breakfast, low compression-big displacement GRUMBLE that makes American sports cars so identifiable from a V6. I'm not sure they will be able to get that sound with turbo's in the mix even with a V8 and form that standpoint the V8 will be sorely missed by me. I like the 'attitude' that comes with piloting the thunderstorm that is an American V8.
If Ford does choose a V6, I'm sure it will impress. At $400k, it will be far out of my reach.
